Simple Pasta
Served with spagetti sauce
made with organic beef, with
the simplest of seasonings.
What makes this dish a great
option is the use of muted
seasoning, which allows all
of the ingredients to come
through and maximizes their
potential. I believe that a
great chef will always use
the fewest possible
ingredients; so, if this
list seems long, it is only
because these ingredients
are the most basic ones.
Much more could be done
with this dish, for example
by adding green peppers
(or peanuts) to the sauce,
but these are not required
and it only serves to make
a simple dish more complex
and thereby risk losing
one or more flavours in
the mix. On the minimalist
side of things, one may
choose to omit basil or
any of the hot ingredients
or peppers. Remember a
recipe is nothing but a
rough guide, and a great
chef will never follow a
recipe since his choice of
ingredients is dependent
upon availability, and
flavour varies even within
a batch upon occasion.
For good health, try fresh
chopped organic garlic as
a topping- it goes well
with the pepper and cheese.
For years I enjoyed
my mother's spagetti sauce for its flavour.
She always used chili peppers for the hot seasoning.
When chilis are available, they are used
instead of cayenne pepper, and are best removed prior
to serving the sauce. I well remember the dedication
required to find all of the chilis (perhaps 3 or 4
in a large pot of spagetti sauce) and remove them
to prevent an unwanted incident. While this recipe is
loosely based on the traditional recipe, I find no
need to measure ingredients precisely, but then I
do consider myself a master chef.
Remember that pasta is not easy to digest when
compared with raw fresh fruits and vegetables, and
adjust for health accordingly. Also, beef depletes
calcium, so bump up calcium intake and increase
magnesium as a natural laxative to allow water
into the colon. Pineapples aid in beef digestion
by means the enzyme bromelain contained therein,
according to Jay the Juiceman.
I am finding liquid calcium-magnesium to a very good
adjunct to capsule and tablet-based food supplements.
Be warned, however, that excessive use of liquid
calcium may lead to problems when adequate sunshine
(1-2 hours per day) is not received by a substantial
area of skin, this according to a 30-year study in
Japan as documented on page 124 of the book
The Calcium Factor by Robert R. Barefoot and Carl J.
Reich. Coral calcium, as shown in the same study, has
no such adverse effect regardless of the amount of
sunshine.

Simple Pasta
1 - 28 oz can organic tomatoes
1 - 7 oz can tomato paste
1 lb lean ground organic beef
1 small-medium organic onion
2 cloves organic garlic
½ tsp sea salt, or to taste
2 pinches cayenne pepper, to taste
3 dashes hot red pepper, organic
1-2 tsp oregano, organic, to taste
1-2 tsp dried basil, to taste
1 large bay leaf
1-3 boxes organic pasta, or equivalent
1 large heavy pot
Heat pot to medium-high temperature and chop and throw in
onion. Add beef and break up with a wooden spoon or
spade, adding garlic when bottom of pot is moist.
Continue stirring occasionally and turning beef until
80% of the beef is brown in colour, but still pink in
a few spots. Add can of tomatoes and tomato paste and
mix well. Add salt to taste (about ½ tsp) and add
the rest of the spices. Bring to a boil on medium-high
heat, stirring, and then reduce to simmer for 3 hours.
After 3 hours prepare pasta to the desired degree of
tenderness, using sea-salted, boiling-hot water. Strain
pasta, serve in a large soup dish or on a plate, using
sauce moderately to ensure the pasta is enjoyed and not
overpowered by the sauce (use personal taste).
Top with chopped jalapeño, other hot fresh peppers
and romano and parmeggiano reggiano cheeses (about on
the ratio 1 to 3).
Drizzle with about 1 tsp cold-pressed extra-virgin
organic olive oil.
Eat what you like. Listen to your body
and stop eating when your body tells you to.
Do not eat what someone tells you to eat,
not ever, not once.
