Cider Bread
Ready in a half-hour, this bread
keeps well and may be enjoyed with
a great variety of food.
Irish
soda bread is the inspiration for this
recipe. It uses the concept of combining
any acid (vinegar, orange juice, etc...)
with baking soda, and thereby creating
a simple leaven for rising bread.

Cider Bread
2 cups organic flour, all-purpose is fine
3 tsp organic apple cider vinegar
2 tsp baking soda
¼ cup organic honey
1 tsp sea salt
2 T butter (organic)
1 cup goat's milk (organic)
Add cider vinegar to
flour and mix well. Add all other
ingredients and mix to an even
consistency. Pour batter into
2 buttered bread pans and pop
straight into the oven (no rising
time required). Bake for 20
minutes at 350-400°F. If tops
of loaves are too brown after 10
minutes butter the tops of the
loaves with a piece of wax paper.
Loaves are done when bread is firm
throughout, sometimes indicated by
a hollow sound when tapped on the
bottom, or by brown bottoms, or
by the fizzing at the top having
ceased.
When done remove bread from pans
immediately and place on a cooling
rack. Keep covered with
a damp tea towel while cooling.
Enjoy with ample butter.
Goes extremely well with soup
such as
Lentil Soup, and
with tea or cheese. Very quick.
Quick is better than thick.
